Last week for the Lunch Spesh by the slice
Tuesday, March 23, 2010 at 9:27AM Beginning next week, March 29th, we're gonna be 86ing the lunch special by the slice. We realize this was a convenient option, but after trying it out for a while, it's become clear that the price is too costly for our young company over the long-term.
Our thoughts:
1. Quality: Our concept is based on super high quality pies that are both constructed of the freshest stuff we can find and served fresh, crispy, and hot off the bricks in our oven. Holding the pies for any amount of time - especially under a heat lamp - lessens these critical qualities.
2. Speed: Many, if not most people still order whole pies at lunch, and the absence of the waves of lunch special pies really speeds everything up for everyone else. This way, everyone can get the exact pie they desire as quickly as possible.
3. Waste: As a result of rotating new pies thru the lunch special, most all the old pies were wasted. This is wrong on multiple levels, and proved too counter-concept.
As a new company, we're working out lots of the R&D in-store, along with all our staff and faithful customers. Much trial & error, testing, and feedback have been and will continue to be necessary to our success as a pizza shop. This process is all about defining who we are. Thanks to everyone who has helped us so far, and we invite everyone to come along with us as we shape this concept into the WEST CRUST that many more will hopefully enjoy in the future!
