<p>Our thoughts:</p>
<p>1.&nbsp; Quality:&nbsp; Our concept is based on super high quality pies that are both constructed of the freshest stuff we can find and served fresh, crispy, and hot off the bricks in our oven.&nbsp; Holding the pies for any amount of time - especially under a heat lamp - lessens these critical qualities.</p>
<p>2.&nbsp; Speed:&nbsp; Many, if not most people still order whole pies at lunch, and the absence of the waves of lunch special pies really speeds everything up for everyone else.&nbsp; This way, everyone can get the exact pie they desire as quickly as possible.&nbsp;</p>
<p>3.&nbsp; Waste:&nbsp; As a result of rotating new pies thru the lunch special, most all the old pies were wasted.&nbsp; This is wrong on multiple levels, and proved too counter-concept.</p>
